- Preparation: 135 min
- Cooking: 40 min
- Makes: 1 serving (240 g)
- Difficulty: Hard
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 30 g Rice flour
- 30 g Tapioca pearls, dry
- 120 g Coconut milk, canned
- 40 g Sugar
- 20 g Water
Method
- Whisk the rice flour and tapioca pearls, standing in for tapioca starch, with the water until smooth.
- Warm the coconut milk with the sugar until the sugar dissolves, then whisk it into the flour mixture until completely smooth, with no lumps; divide the batter into two portions, tinting one if you like.
- Lightly grease a small heatproof pan and pour in a thin layer of one portion of the batter.
- Steam for 4-5 minutes until just set, then pour over a thin layer of the second portion and steam for another 4-5 minutes; repeat, alternating layers, until all the batter is used.
- Steam the final layer for 10 minutes to ensure the whole cake is cooked through.
- Cool completely, ideally for a couple of hours, before slicing into the cake to reveal the distinct layers.
