  • Preparation: 30 min
  • Cooking: 120 min
  • Makes: 1 serving (73.6 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 20 g Egg yolks, raw
  • 20 g Butter, unsalted
  • 15 g Sugar
  • 8 g Flour, all-purpose
  • 10 g Sweetened condensed milk
  • 0.3 g Cinnamon
  • 0.1 g Nutmeg
  • 0.1 g Cloves
  • 0.1 g Cardamom

Method

  1. This is for 1 thin slice, about 1/16 of a whole cake; multiply everything by 16 for a full traditional lapis legit, which is baked as 16-20 very thin layers.
  2. Beat the butter and sugar until light, then beat in the egg yolk and condensed milk.
  3. Sift in the flour with the cinnamon, nutmeg and cloves and fold in gently, along with the ground cardamom, to make a thick, spiced batter.
  4. Line a small square tin with parchment and spread a very thin layer of batter across the base.
  5. Bake or grill under a hot broiler for 2-3 minutes until just set and lightly browned on top, then spread the next thin layer directly over it and broil again.
  6. Repeat, layer by layer, pressing each gently with the back of a spoon before adding the next, until all the batter is used.
  7. Let the cake cool completely, then chill before turning out and slicing thinly, since lapis legit is meant to be a dense, rich cake eaten in small pieces.
