Ingredients

  • 90 g Rice, white, long-grain
  • 60 g Coconut milk, canned
  • 60 g Chicken stock, homemade
  • 80 g Chicken thighs, boneless, skinless, raw
  • 55 g Eggs, whole, raw
  • 50 g Chayote, raw
  • 10 g Shallots, raw
  • 5 g Garlic, raw
  • 4 g Macadamia nuts
  • 0.2 g Bay leaves
  • 5 g Lemongrass, raw
  • 1 g Salt

Method

  1. Boil the egg for 9-10 minutes, then cool, peel and halve it.
  2. Rinse the rice and put it in a pot with the coconut milk, half the chicken stock, the bruised lemongrass, bay leaf and half the salt; bring to a simmer, cover, and cook on low heat for about 15 minutes, until the liquid is absorbed.
  3. Meanwhile, simmer the chicken thighs in the remaining stock with the shallots and garlic for 12-15 minutes until cooked through, then lift out and shred the meat.
  4. Blend the candlenuts with a little of the poaching liquid and simmer the chayote in it with the remaining salt for 8-10 minutes until tender, to make a light savory sauce.
  5. Fluff the rice with a fork once the liquid is absorbed and let it sit, covered, off the heat for 5 minutes.
  6. Serve the rice with the shredded chicken, the chayote in its sauce and the boiled egg alongside.
