  • Makes: 1 serving (385 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein, Low carb
  • Contains: nut, poultry

Ingredients

  • 200 g Chicken thighs, skin-on, raw
  • 120 g Coconut milk, canned
  • 25 g Shallots, raw
  • 8 g Garlic, raw
  • 8 g Macadamia nuts
  • 6 g Ginger, fresh
  • 5 g Lemongrass, raw
  • 1 g Bay leaves
  • 1 g Lemon zest
  • 1 g Cumin
  • 1 g Coriander seeds
  • 8 g Vegetable oil
  • 1 g Salt

Method

  1. Blend the shallot, garlic, candlenut (macadamia stand-in), half the ginger, cumin and coriander seed into a smooth paste.
  2. Bruise the lemongrass and cut the chicken thigh into large bone-in pieces.
  3. Heat the oil in a pot and fry the spice paste for 2-3 minutes until fragrant, then add the lemongrass, bay leaf (salam stand-in), lime leaf (lemon zest stand-in) and remaining ginger.
  4. Add the chicken and turn to coat in the paste, then pour in the coconut milk and 100 g water and bring to a gentle simmer.
  5. Cover and simmer on low heat for 35-40 minutes, stirring occasionally so the coconut milk does not split, until the chicken is tender and cooked through (juices run clear, 74 °C/165 °F).
  6. Season with the salt, simmer uncovered for a further 5 minutes to thicken slightly, and serve with rice.
