Ingredients

  • 45 g Flour, bread (strong)
  • 45 g Red bean paste, sweetened
  • 8 g Sugar
  • 5 g Butter, unsalted
  • 20 g Milk, whole
  • 1 g Yeast, active dry
  • 12 g Eggs, whole, raw
  • 0.5 g Salt

Method

  1. Warm the milk slightly and stir in the yeast and a pinch of the sugar; let it stand for 5 minutes until foamy.
  2. Mix the flour, remaining sugar and salt, then work in the yeast mixture, half the egg and the softened butter to form a soft dough; knead for 8-10 minutes until smooth.
  3. Cover and let the dough rise in a warm place for about 1 hour, until doubled.
  4. Punch down, flatten into a disc, place a ball of red bean paste in the centre, and gather the dough up and around it, pinching to seal.
  5. Place seam-side down, flatten slightly, cover and let it prove for 20-30 minutes, then brush with the remaining beaten egg.
  6. Bake at 180 °C (350 °F) for 13-15 minutes until golden brown.
  7. This makes 1 bun; multiply the ingredients by 8 for a full batch.
