  • Makes: 1 serving (128 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 35 g Rice, glutinous
  • 20 g Rice, white, short-grain
  • 70 g Red bean paste, sweetened
  • 3 g Sugar
  • 0.3 g Salt

Method

  1. Rinse the glutinous and short-grain rice together and soak for 30 minutes, then drain.
  2. Cook the rice with 75 g water (steamer or covered pot) until soft, about 20 minutes, then let it steam off the heat for 10 minutes.
  3. While still warm, mash the rice roughly with a pestle or the back of a spoon, leaving some texture, until it holds together.
  4. With damp hands, divide the rice into two balls and shape each into a rough oval.
  5. Warm the sweetened red bean paste with the sugar and salt to loosen it slightly, then flatten a portion in your palm and wrap it around each rice ball, smoothing the surface.
  6. Serve at room temperature the same day.
