Castella (Japanese Sponge Cake)
One serving has 183 kcal and 5 g protein, and at least a fifth of a woman's daily need of selenium (25%). Ready in 60 minutes.

- Preparation: 20 min
- Cooking: 40 min
- Makes: 1 serving (65 g)
- Difficulty: Medium
- Diets: Vegetarian, Dairy-free
- Contains: egg, gluten, honey
Ingredients
- 15 g Flour, bread (strong)
- 25 g Eggs, whole, raw
- 20 g Sugar
- 5 g Honey
Method
- This recipe gives 1 slice (1/10 of a loaf); multiply everything by 10 and bake as one loaf.
- Whisk the egg and sugar together over a pan of warm water until pale, thick and roughly tripled in volume, about 8-10 minutes.
- Warm the honey with a splash of water until runny, then fold it into the egg mixture off the heat.
- Sift the flour over the batter and fold in gently in three additions, being careful not to knock out the air.
- Pour into a lined loaf tin and drop it gently on the counter a few times to pop large bubbles.
- Bake at 160 °C (320 °F) for 35-40 minutes until a skewer comes out clean, then wrap the whole warm loaf in plastic and rest overnight for the classic moist, close crumb before slicing.
