  • Makes: 1 serving (250 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy, egg

Ingredients

  • 100 g Cream, heavy
  • 60 g Milk, whole
  • 20 g Egg yolks, raw
  • 30 g Sugar
  • 40 g Green tea, brewed

Method

  1. Brew the green tea very strong with a small amount of hot water so it is concentrated; if matcha powder is available, whisk 4-5 g of it into the warm milk instead for a more authentic flavour and colour.
  2. Warm the milk and half the sugar in a saucepan until steaming but not boiling, then stir in the concentrated tea.
  3. Whisk the egg yolks with the remaining sugar, then slowly pour in the hot milk while whisking constantly.
  4. Return the mixture to low heat and stir constantly until it thickens slightly and coats the back of a spoon; do not let it boil.
  5. Strain into a bowl, stir in the heavy cream, and chill thoroughly, then churn in an ice cream maker until soft-set.
  6. Freeze for at least 2-3 hours until firm before serving.
