  • Difficulty: Medium
  • Diets: High protein
  • Contains: beef, dairy, egg, fish, gluten, pork

Ingredients

  • 90 g Beef, ground, 85% lean, raw
  • 60 g Pork, ground, raw
  • 50 g Onions, raw
  • 15 g Breadcrumbs, dry
  • 15 g Milk, whole
  • 25 g Eggs, whole, raw
  • 0.3 g Nutmeg
  • 1 g Salt
  • 0.3 g Black pepper
  • 8 g Vegetable oil
  • 15 g Ketchup
  • 6 g Worcestershire sauce
  • 5 g Butter, unsalted

Method

  1. Finely chop half the onion and cook in a little of the oil until soft and translucent, then let it cool.
  2. Soak the breadcrumbs in the milk for a few minutes until softened.
  3. Combine the ground beef, ground pork, cooked onion, soaked breadcrumbs, egg, nutmeg, salt and pepper in a bowl, and knead until sticky.
  4. Shape into an oval patty about 2 cm thick, tossing it between your hands to knock out air pockets.
  5. Heat the remaining oil in a pan over medium heat, sear the patty for 2 minutes per side, then cover and cook on low heat for 8-10 minutes until cooked through (74 °C/165 °F).
  6. Remove the patty and add the ketchup, Worcestershire sauce and butter to the pan with 30 g water, stirring to make a quick sauce with the browned bits.
  7. Slice the remaining onion thinly, wilt it in the sauce for a minute, then pour over the patty to serve.
