Ikameshi (Rice-Stuffed Squid)
One serving has 379 kcal and 31 g protein, and at least a fifth of a woman's daily need of copper (352%), selenium (144%), cobalamin (92%), riboflavin (67%), phosphorus (63%) and niacin (46%). Ready in 65 minutes.

- Preparation: 20 min
- Cooking: 45 min
- Makes: 1 serving (353 g)
- Difficulty: Medium
- Diets: Pescatarian, Dairy-free, High protein
- Contains: alcohol, celery, fish, gluten, shellfish, soy, sulphite
Ingredients
- 160 g Squid, raw
- 45 g Rice, glutinous
- 12 g Soy sauce
- 6 g Sugar
- 10 g Wine, fortified, sweet
- 120 g Fish stock
Method
- Rinse the glutinous rice and soak for 20 minutes, then drain well; it should still be raw, not cooked.
- Separate the squid tentacles from the body, finely chop the tentacles, and mix them with the drained rice.
- Loosely stuff the rice mixture into the squid bodies, filling only about two-thirds full, and secure the opening with a toothpick (the rice will expand as it cooks).
- Bring the fish stock, soy sauce, sugar and mirin (sweet fortified wine stand-in) to a simmer in a pot just wide enough to hold the squid snugly.
- Add the stuffed squid, cover and simmer gently on low heat for 40-45 minutes, turning occasionally, until the rice inside is fully cooked and the squid is tender.
- Remove the toothpicks, slice into rounds and serve with the reduced braising liquid spooned over.
