Ingredients

  • 100 g Red bean paste, sweetened
  • 100 g Water
  • 0.2 g Salt
  • 25 g Rice flour, glutinous

Method

  1. Knead the glutinous rice flour with about 20 g water into a smooth dough, then shape into a small flat disc.
  2. Toast the mochi disc in a dry pan over medium heat, or grill it, for 2-3 minutes per side until puffed and lightly browned in spots.
  3. Meanwhile, warm the red bean paste with the water in a small pan, whisking until smooth, and simmer for 3-4 minutes.
  4. Season with the pinch of salt, which brings out the sweetness.
  5. Pour the hot sweet soup into a bowl and drop the toasted mochi into the centre to serve.
