  • Preparation: 15 min
  • Cooking: 5 min
  • Makes: 1 serving (88 g)
  • Difficulty: Medium
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 35 g Rice flour, glutinous
  • 8 g Sugar
  • 45 g Red bean paste, sweetened

Method

  1. Whisk the glutinous rice flour, sugar and 50 g water together until smooth.
  2. Cook the mixture in a covered bowl in the microwave for 1-2 minutes, stirring halfway, until it turns thick, glossy and translucent (or steam over simmering water, stirring, for about 12 minutes).
  3. Turn the hot dough out onto a lightly dusted surface and let it cool just enough to handle.
  4. Flatten the dough into an oval, place the red bean paste in the centre, and fold the dough up and around it to enclose.
  5. Traditionally the cake is wrapped in a salted, pickled cherry (sakura) leaf, which perfumes it and is peeled off before eating; if unavailable, simply serve the cake as is.
  6. Serve at room temperature the same day.
