  • Preparation: 15 min
  • Cooking: 60 min
  • Makes: 1 serving (108 g)
  • Difficulty: Medium
  • Diets: Vegan, Gluten-free, Dairy-free
  • Contains: sesame

Ingredients

  • 85 g Rice, glutinous
  • 20 g Adzuki beans, dried
  • 2 g Sesame seeds
  • 0.7 g Salt

Method

  1. Rinse the adzuki beans and simmer them in plenty of water for 30-35 minutes until just tender but not falling apart; drain, reserving the reddish cooking liquid, and let both cool.
  2. Rinse the glutinous rice and soak it in the reserved bean liquid (topped up with water if needed to cover) for at least 3 hours or overnight; this tints the rice a pale pink.
  3. Drain the rice, reserving the soaking liquid, and mix the rice with the cooked beans.
  4. Steam the rice and bean mixture over simmering water for 30-40 minutes, sprinkling with a little of the reserved liquid partway through, until the rice is tender and slightly chewy.
  5. Sprinkle with the salt and sesame seeds and mix gently before serving, traditionally for celebrations.
