  • Preparation: 10 min
  • Cooking: 5 min
  • Makes: 1 serving (129 g)
  • Difficulty: Easy
  • Diets: Pescatarian, Dairy-free
  • Contains: alcohol, celery, fish, gluten, soy, sulphite

Ingredients

  • 60 g Somen noodles, dry
  • 50 g Fish stock
  • 4 g Soy sauce
  • 6 g Wine, fortified, sweet
  • 6 g Scallions, raw
  • 3 g Ginger, fresh

Method

  1. Bring the fish stock (dashi stand-in), soy sauce and mirin (sweet fortified wine stand-in) to a simmer, then cool and chill the dipping sauce.
  2. Bring a large pot of unsalted water to a rolling boil and cook the somen for 1-2 minutes only, as they cook very quickly.
  3. Drain immediately and rinse well under cold running water, rubbing gently, until completely chilled; this also washes away much of the salt used to keep the dry noodles pliable.
  4. Drain thoroughly and pile the noodles into a bowl of ice water or onto a chilled plate.
  5. Serve with the cold dipping sauce, scallion and grated ginger for dipping.
