  • Preparation: 15 min
  • Cooking: 30 min
  • Makes: 1 serving (393 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: alcohol, celery, egg, fish, gluten, pork, soy

Ingredients

  • 120 g Egg noodles, dry
  • 60 g Pork belly, raw
  • 160 g Fish stock
  • 14 g Soy sauce
  • 5 g Sugar
  • 6 g Sake
  • 20 g Bamboo shoots, canned
  • 8 g Scallions, raw

Method

  1. Simmer the pork belly in water to cover for 30-40 minutes until tender, then slice.
  2. Simmer the fish stock (dashi stand-in) with the soy sauce, sugar and sake for 15-20 minutes until it reduces slightly and concentrates in flavour; this is the dipping broth, meant to be stronger than a drinking soup.
  3. Add the sliced pork and bamboo shoots to the dipping broth and keep warm.
  4. Cook the noodles in a separate pot of boiling water until tender, then drain and rinse briefly under cold water to firm them up.
  5. Pile the chilled noodles onto a plate and pour the hot concentrated broth with pork and bamboo shoots into a separate bowl alongside.
  6. Scatter the broth with scallion, and dip small bundles of noodles into it before eating.
