  • Makes: 1 serving (675 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: celery, fish, pork, poultry

Ingredients

  • 80 g Rice noodles, dry
  • 100 g Pork loin, raw
  • 250 g Chicken broth
  • 170 g Water
  • 30 g Bean sprouts, raw
  • 5 g Garlic, raw
  • 10 g Shallots, raw
  • 4 g Fish sauce
  • 5 g Lime juice
  • 8 g Scallions, raw
  • 3 g Cilantro, fresh
  • 1 g Black pepper
  • 3 g Sugar
  • 6 g Vegetable oil

Method

  1. Fry the sliced garlic and shallots in the oil until golden and crisp; set aside with the flavoured oil.
  2. Bring the broth and the water to a simmer together in a pot; this stands in for the traditional pork bone broth, so use a light homemade pork stock instead if you have one.
  3. Add the sliced pork loin to the simmering broth and poach for 3-4 minutes until just cooked through.
  4. Season the broth with the fish sauce, sugar and black pepper.
  5. Meanwhile, blanch the rice noodles and bean sprouts briefly in boiling water, then divide into bowls.
  6. Ladle the hot broth and pork over the noodles, top with the fried garlic and shallots, scallion and cilantro, and serve with the lime juice.
