  • Cooking: 20 min
  • Makes: 1 serving (254 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: fish, peanut, pork

Ingredients

  • 80 g Pork, ground, raw
  • 50 g Coconut milk, canned
  • 5 g Lemongrass, raw
  • 8 g Garlic, raw
  • 10 g Shallots, raw
  • 1 g Turmeric
  • 3 g Chili peppers, red, raw
  • 8 g Fish sauce
  • 5 g Sugar
  • 10 g Peanuts, roasted
  • 18 g Vegetable oil
  • 25 g Rice flour
  • 1 g Salt
  • 30 g Water

Method

  1. Mix the rice flour with the water into a thin, smooth batter, spread a thin layer on a plate, and steam for 3-4 minutes until set into a thin sheet.
  2. Cut the steamed sheet into small pieces and let them dry and firm up for at least an hour, then shallow-fry in a little of the oil until crisp and puffed; these are the rice crackers served with the dip.
  3. Pound or mince the lemongrass, garlic and shallots into a paste with the turmeric and chili.
  4. Heat the remaining oil in a pan, fry the paste for 1-2 minutes until fragrant, then add the ground pork and cook, breaking it up, for 5-6 minutes until browned.
  5. Stir in the coconut milk, fish sauce, sugar and salt, and simmer for 8-10 minutes until thick and richly coloured.
  6. Stir in the crushed peanuts, transfer to a bowl, and serve warm with the crisp rice crackers for scooping.
