Ingredients

  • 60 g Taro, raw
  • 25 g Tapioca pearls, dry
  • 20 g Sugar
  • 120 g Coconut milk, canned
  • 1 g Salt
  • 60 g Water

Method

  1. Peel and dice the taro, then steam or boil until very soft, about 15 minutes, and mash while still warm.
  2. Knead the mashed taro with the tapioca starch and a little of the water until you get a smooth, pliable dough; work in a touch more starch if it's sticky.
  3. Roll the dough into small balls, about the size of a marble.
  4. Bring a pot of water to a boil and cook the balls for 3-4 minutes until they float, then lift out with a slotted spoon.
  5. Warm the coconut milk with the sugar and salt until the sugar dissolves, then ladle over the taro balls and serve warm.
