  • Makes: 1 serving (391 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: gluten, poultry, soy

Ingredients

  • 190 g Chicken thighs, boneless, skinless, raw
  • 18 g Hoisin sauce
  • 3 g Cayenne pepper
  • 60 g Cabbage, green, raw
  • 70 g Sweet potato, raw
  • 15 g Scallions, raw
  • 5 g Mint, fresh
  • 6 g Garlic, raw
  • 3 g Ginger, fresh
  • 5 g Sugar
  • 6 g Soy sauce
  • 10 g Vegetable oil

Method

  1. Cut the chicken into bite-sized pieces and mix with the gochujang-style sauce, gochugaru stand-in, garlic, ginger, soy sauce and sugar; marinate for at least 20 minutes.
  2. Slice the cabbage into wide strips and cut the sweet potato into thin, bite-sized pieces.
  3. Heat the oil in a large pan or wok over medium-high heat and add the sweet potato first, cooking for 3-4 minutes to give it a head start, since it takes longer than the other vegetables.
  4. Add the marinated chicken and cook for 5-6 minutes, stirring often, until it is browned on the outside.
  5. Add the cabbage and scallions and stir-fry for another 4-5 minutes, until the cabbage wilts and the chicken is cooked through with clear juices (74 °C / 165 °F).
  6. Tear the perilla-style leaves over the top just before serving hot, straight from the pan.
