Dongchimi (Watery Radish Kimchi)
One serving has 48 kcal and 1 g protein, and at least a fifth of a woman's daily need of vitamin C (41%) and copper (21%). Ready in 20 minutes.

- Preparation: 20 min
- Makes: 1 serving (336 g)
- Difficulty: Easy
- Diets: Vegan, Gluten-free, Dairy-free, Low carb
Ingredients
- 110 g Daikon radish, raw
- 1.4 g Salt
- 170 g Water
- 4 g Garlic, raw
- 3 g Ginger, fresh
- 6 g Scallions, raw
- 40 g Asian pears, raw
- 2 g Chili peppers, red, raw
Method
- This mild brine makes one small jar (one serving); multiply by 4-6 for a bigger jar that lasts longer.
- Peel the daikon, cut into chunks, and rub with a little of the salt; let sit for 20 minutes, then rinse lightly.
- Tie the garlic, ginger and sliced chili loosely in cheesecloth so they can be removed later.
- Dissolve the remaining salt in the water, then pour over the radish in a clean jar along with the spice bundle, scallion and sliced pear.
- Leave at room temperature for 1-2 days until faintly tangy, then refrigerate; serve chilled with some of its brine, and use within a week.
