- Preparation: 135 min
- Cooking: 15 min
- Makes: 1 serving (254 g)
- Difficulty: Medium
- Diets: Dairy-free, Low carb
- Contains: beef, gluten, sesame, soy
Ingredients
- 180 g Beef short ribs, raw
- 15 g Soy sauce
- 8 g Sugar
- 30 g Asian pears, raw
- 6 g Garlic, raw
- 5 g Sesame oil
- 10 g Scallions, raw
- 0.3 g Black pepper
Method
- This needs about 180 g of trimmed, boneless short rib meat - if buying bone-in flanken-cut ribs, get roughly 320-350 g, since much of the weight is bone.
- Slice the meat thinly across the grain, or ask your butcher to cut it flanken-style if it is still on the bone.
- Grate the Asian pear and mix it with the soy sauce, sugar, minced garlic, sesame oil and black pepper to make the marinade; the pear both sweetens and tenderizes the meat.
- Add the meat to the marinade, turn to coat well, cover, and refrigerate for at least 2 hours, or overnight for deeper flavor.
- Heat a grill or heavy griddle pan until very hot and cook the meat in a single layer for 2-3 minutes a side, until charred at the edges and cooked to your liking.
- Scatter with the scallions and serve hot, with the juices run through once with no red remaining if you like it well done.
