  • Cooking: 20 min
  • Makes: 1 serving (469 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: gluten, pork, soy

Ingredients

  • 120 g Flour, all-purpose
  • 0.6 g Salt
  • 55 g Water
  • 18 g Black bean sauce
  • 80 g Pork shoulder, raw
  • 40 g Potatoes, raw
  • 40 g Zucchini, raw
  • 50 g Onions, raw
  • 40 g Cabbage, green, raw
  • 5 g Cornstarch
  • 8 g Sugar
  • 12 g Vegetable oil

Method

  1. Knead the flour, salt and water into a firm, smooth dough, cover, and rest for at least 20 minutes.
  2. Roll the dough out thinly and cut into noodle strands, then dust with a little extra flour so they do not stick together.
  3. Dice the pork, potato, zucchini, onion and cabbage into small, even cubes.
  4. Heat half the oil in a pan and fry the black bean sauce stand-in over low heat for 2-3 minutes to mellow its raw edge, then set it aside.
  5. Heat the remaining oil, brown the pork for 3-4 minutes, then add the onion, potato, zucchini and cabbage and stir-fry for 5 minutes until nearly tender.
  6. Stir the fried bean sauce and sugar back in with enough water to loosen it into a thick sauce, and simmer for 5 minutes; mix the cornstarch with a splash of water and stir in to thicken.
  7. Boil the fresh noodles for 2-3 minutes until tender, drain, and top with the black bean sauce to serve.
