Ingredients
- 100 g Flour, all-purpose
- 0.8 g Salt
- 345 g Water
- 80 g Fish stock
- 3 g Seaweed, dried
- 40 g Potatoes, raw
- 40 g Zucchini, raw
- 20 g Onions, raw
- 4 g Garlic, raw
- 30 g Eggs, whole, raw

Method
- Knead the flour with a little of the water and half the salt into a firm dough, cover, and rest for 20-30 minutes.
- Meanwhile, simmer the fish stock, dried kelp and the rest of the water together for 15 minutes to build a light broth, then lift out the kelp.
- Add the sliced potato and onion to the broth and simmer for 8-10 minutes until the potato is nearly tender.
- Roll the rested dough out thinly and cut it into wide noodle strips by hand, dusting with flour so they don't stick.
- Beat the egg and cook it as a thin sheet in a separate pan, then slice it into strips for garnish.
- Add the noodles, zucchini, garlic and soy sauce to the broth and simmer for 4-5 minutes until the noodles are tender, then top each bowl with the egg strips and scallions.
