One serving has 473 kcal and 16 g protein, and at least a fifth of a woman's daily need of folate (111%), manganese (95%), copper (90%), zinc (46%), thiamin (44%) and phosphorus (41%). Ready in 110 minutes.

- Preparation: 20 min
- Cooking: 90 min
- Makes: 1 serving (636 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 60 g Adzuki beans, dried
- 500 g Water
- 30 g Rice, white, short-grain
- 30 g Rice flour, glutinous
- 15 g Sugar
- 0.8 g Salt
Method
- Rinse the adzuki beans, cover generously with water, bring to a boil, and boil hard for 10 minutes, then drain.
- Return the beans to the pot with the fresh water and simmer, covered, for 1 hour, until very soft; mash them with the liquid, or blend and pass through a sieve for a smoother texture.
- Meanwhile, knead the glutinous rice flour with a little hot water and a pinch of salt into a soft dough and roll into small balls (saealsim).
- Rinse the rice and add it to the red bean liquid, simmering for 15-20 minutes, stirring often, until the rice is tender and the porridge has thickened.
- Drop in the rice balls and cook for 5 more minutes until they float, then stir in the sugar and remaining salt and serve hot.
