Ingredients
- 250 g Cornish hen, raw
- 30 g Rice, glutinous
- 15 g Garlic, raw
- 8 g Jujubes, dried
- 15 g Chestnuts, roasted
- 700 g Water
- 8 g Scallions, raw
- 1.3 g Salt
- 0.3 g Black pepper
Method
- Traditionally simmered with a piece of fresh ginseng root; if you can find some, add a small piece with the garlic for the authentic flavor (it is not in the catalog, so this recipe works well without it too).
- Rinse a small whole chicken inside and out, and soak the glutinous rice in water for 20 minutes, then drain.
- Stuff the cavity loosely with the rice, garlic, jujube and chestnuts, and close with a skewer.
- Put the chicken in a pot with the water, bring to a boil, and skim off foam well.
- Cover and simmer gently for about 1 hour 20 minutes, until the chicken and stuffing are completely cooked and tender.
- Season the broth with the salt, ladle into a bowl with the chicken, and scatter with scallion and black pepper.
