  • Preparation: 130 min
  • Cooking: 20 min
  • Makes: 1 serving (260 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 15 g Rice, white, short-grain
  • 220 g Water
  • 20 g Sugar
  • 3 g Ginger, fresh
  • 2 g Pine nuts

Method

  1. Cook the rice with a little water until just tender, then rinse briefly and set a spoonful of the whole grains aside to float in the finished drink.
  2. Traditional sikhye sweetens and thins the rice with malted barley powder steeped in warm water over several hours; since that isn't available here, this quick version sweetens it directly with sugar instead.
  3. Bring the water, sugar and sliced ginger to a simmer and cook for 15-20 minutes, then remove the ginger.
  4. Stir the cooked rice into the sweet ginger water and simmer for 2-3 minutes more.
  5. Let it cool, then chill for at least 2 hours until very cold.
  6. Serve cold in a cup or bowl with a few grains of rice floating on top and the pine nuts scattered over.
