Songpyeon (Half-Moon Rice Cakes)
One serving has 277 kcal and 5 g protein, and at least a fifth of a woman's daily need of copper (62%), manganese (52%), pyridoxine (25%) and selenium (21%). Ready in 40 minutes.

- Preparation: 20 min
- Cooking: 20 min
- Makes: 1 serving (106 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free, Dairy-free
- Contains: honey, sesame
Ingredients
- 50 g Rice flour, glutinous
- 35 g Water
- 0.3 g Salt
- 12 g Sesame seeds
- 8 g Honey
- 0.2 g Cinnamon
Method
- This makes about 5 songpyeon, one serving.
- Toast the sesame seeds lightly in a dry pan, then crush them and mix with the honey and cinnamon to make a sticky filling.
- Mix the glutinous rice flour with the salt, then slowly stir in the hot water and knead into a smooth, soft dough.
- Pinch off small pieces of dough, flatten each into a disc, spoon a little filling into the middle, and fold and pinch the edges into a half-moon shape, sealing well so no filling leaks out.
- Line a steamer with damp cloth or parchment (traditionally a bed of pine needles is used for aroma) and steam the rice cakes for 15-20 minutes until they turn slightly glossy and firm.
- Rinse briefly under cold water and brush lightly with a little sesame oil so they don't stick together, then serve warm or at room temperature.
