One serving has 736 kcal and 25 g protein, and at least a fifth of a woman's daily need of cobalamin (71%), iron (65%), selenium (50%), choline (32%), zinc (29%) and riboflavin (21%). Ready in 30 minutes.

- Preparation: 10 min
- Cooking: 20 min
- Makes: 1 serving (198 g)
- Difficulty: Medium
- Diets: Dairy-free, Low carb
- Contains: beef, gluten, pork, sesame
Ingredients
- 170 g Blood sausage
- 15 g Glass noodles, dry
- 3 g Mint, fresh
- 4 g Sesame oil
- 0.5 g Salt
- 0.4 g Black pepper
- 5 g Scallions, raw
Method
- Korean sundae is traditionally stuffed fresh into casing with blood, noodles and rice; ready-made blood sausage is the closest catalog stand-in, so here it is gently reheated and served Korean-style instead.
- Soak the glass noodles until soft, boil for 3-4 minutes until tender, drain, and toss with the sesame oil and chopped scallion.
- Steam the whole blood sausage over simmering water for 12-15 minutes, until heated through, then let rest for 2 minutes before slicing into thick rounds.
- Finely shred the perilla (mint stands in here) and scatter over the warm slices.
- Serve the warm slices with the sesame glass noodles alongside and a small dish of the salt and black pepper for dipping.
