  • Diets: Dairy-free
  • Contains: beef, celery, egg, gluten, soy

Ingredients

  • 90 g Rice flour
  • 310 g Water
  • 0.7 g Salt
  • 60 g Beef brisket, raw
  • 200 g Beef broth
  • 30 g Eggs, whole, raw
  • 6 g Garlic, raw
  • 6 g Soy sauce
  • 10 g Scallions, raw
  • 3 g Seaweed, dried

Method

  1. Mix the rice flour with a pinch of the salt and 60 g of the water to form a smooth dough, shape into a long log, and steam for 15-18 minutes until firm and chewy; cool, then slice thinly on a sharp diagonal into ovals (ready-made sliced rice cake can be used instead).
  2. Simmer the beef in the beef broth and the remaining water with the garlic for 20 minutes, until tender, then shred or slice it thinly.
  3. Return the beef to the broth, add the soy sauce, and bring to a boil.
  4. Add the sliced rice cakes and simmer for 5-6 minutes, until they float and turn soft but still chewy.
  5. Beat the egg and drizzle it into the soup in a thin stream, season with the remaining salt, and top with scallion and shredded nori before serving.
