  • 30 g Water
  • 8 g Sesame seeds
  • 5 g Garlic, raw
  • 15 g Tomatoes, raw

Method

  1. Traditionally made from fresh green river algae; dried seaweed, soaked back to a soft mass, is the closest catalog stand-in.
  2. Soak the dried seaweed in the water for 10 minutes until soft and pliable, then chop it into a rough paste.
  3. Mix in the sesame seeds, thinly sliced garlic, chopped tomato and salt.
  4. Spread the mixture out thinly and evenly on a lined tray or plate, into a rough sheet about 15 cm across.
  5. Dry in a very low oven (around 60 °C/140 °F) for 2-3 hours, or in the sun, until firm and leathery, then carefully peel off.
  6. Heat the oil in a pan to about 180 °C (355 °F) and fry the sheet for 15-20 seconds per side, until crisp and puffed; drain and serve as a crunchy snack.
