- Preparation: 20 min
- Cooking: 15 min
- Makes: 1 serving (291 g)
- Difficulty: Medium
- Diets: Dairy-free
- Contains: fish, gluten, peanut, pork
Ingredients
- 130 g Rice, white, long-grain, cooked
- 4 g Curry powder
- 10 g Coconut, desiccated
- 20 g Vegetable oil
- 60 g Pork, ground, raw
- 15 g Peanuts, roasted
- 12 g Lime juice
- 8 g Fish sauce
- 8 g Mint, fresh
- 8 g Cilantro, fresh
- 8 g Scallions, raw
- 4 g Chili peppers, red, raw
- 4 g Sugar
Method
- Mix the cooked rice with the curry powder and shredded coconut, then press into small balls.
- Heat the oil in a pan and fry the rice balls for 6-8 minutes, turning, until deeply golden and crisp outside; drain and break into rough crumbs.
- Cook the ground pork in a dry pan over medium heat for 5-6 minutes, until cooked through and lightly browned, then squeeze over half the lime juice while hot to give it a tangy, fermented-style edge.
- Mix the fish sauce, remaining lime juice and sugar into a dressing.
- Toss the crispy rice, pork, peanuts, mint, cilantro, scallion and chili with the dressing just before serving, so the rice stays crisp.
