- Preparation: 40 min
- Cooking: 10 min

- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 80 g Chickpea flour (besan)
- 1 g Turmeric
- 1 g Salt
- 320 g Water
- 8 g Vegetable oil
- 3 g Garlic, raw
- 5 g Scallions, raw
Method
- Whisk the chickpea flour, turmeric and salt with the water in a saucepan until completely smooth with no lumps.
- Set the pan over medium heat and cook, stirring constantly, for 8-10 minutes until the batter thickens into a smooth, glossy paste that pulls away from the sides of the pan.
- Pour the hot paste into a lightly oiled container, smooth the top, and let it cool at room temperature for about 30 minutes, then chill until firm.
- Turn the set tofu out and cut into slices or cubes; pan-fry in a little of the oil until lightly golden if you want it warm and crisp-edged.
- Warm the remaining oil with the garlic until fragrant, spoon it over the tofu, scatter with the scallion, and serve as a side dish.
