  • Contains: fish

Ingredients

  • 200 g Rice, white, long-grain, cooked
  • 80 g Potatoes, raw
  • 60 g Tomatoes, raw
  • 15 g Tamarind pulp
  • 5 g Vinegar, white
  • 25 g Shallots, raw
  • 8 g Garlic, raw
  • 6 g Fish sauce
  • 2 g Chili powder
  • 12 g Vegetable oil
  • 10 g Scallions, raw
  • 1 g Salt

Method

  1. Boil the potato in salted water for about 15 minutes until tender, then drain, cool slightly and dice.
  2. Fry the sliced shallots and garlic in the oil over medium heat until golden and crisp, then lift out and set aside, keeping the flavoured oil.
  3. Dissolve the tamarind pulp in a splash of warm water and mix with the vinegar to make a sour liquid; this stands in for the traditional fermented rice-soaking liquid (htamin jin ye).
  4. In a large bowl, mix the rice with the tamarind liquid, fish sauce, chili powder and salt until the rice is evenly moistened and seasoned.
  5. Fold in the diced potato and chopped tomato, then top with the fried shallots, garlic, the flavoured oil and scallion before serving at room temperature.
