Ingredients

  • 150 g Catfish, raw
  • 80 g Rice noodles, dry
  • 15 g Lemongrass, raw
  • 10 g Ginger, fresh
  • 10 g Garlic, raw
  • 70 g Onions, raw
  • 2 g Turmeric
  • 15 g Chickpea flour (besan)
  • 8 g Fish sauce
  • 15 g Vegetable oil
  • 50 g Eggs, whole, raw
  • 5 g Lime juice
  • 3 g Cilantro, fresh
  • 15 g Shallots, raw
  • 400 g Water

Method

  1. Simmer the fish with the sliced onion, half the garlic, the ginger and lemongrass in the water for 25-30 minutes until the fish is falling-apart tender; lift out the fish, flake the meat off the bones, and strain and reserve the stock.
  2. Heat the oil in a pot and fry the remaining garlic, the turmeric and the chickpea flour for a minute until fragrant, then whisk in the reserved fish stock a little at a time to avoid lumps.
  3. Return the flaked fish to the pot, add the fish sauce, and simmer for 15 minutes until the soup thickens slightly and turns pale golden.
  4. Meanwhile, hard-boil the egg, cool, peel and halve; soak the rice noodles in boiling water until soft, then drain.
  5. Divide the noodles among bowls, ladle over the hot fish broth, and top with the boiled egg, fried shallots, cilantro and a squeeze of lime juice.
