  • Preparation: 15 min
  • Cooking: 15 min
  • Makes: 1 serving (173 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: egg

Ingredients

  • 35 g Rice flour
  • 15 g Chickpea flour (besan)
  • 55 g Water
  • 40 g Quail eggs, raw
  • 12 g Scallions, raw
  • 1 g Salt
  • 15 g Vegetable oil

Method

  1. Whisk the rice flour, chickpea flour, salt and water into a thin, smooth batter and let it rest for 10 minutes while you chop the scallions and crack the quail eggs into a small bowl one at a time.
  2. Heat a well-oiled paniyaram or takoyaki-style pan (small round hollows) or a small non-stick frying pan over medium heat and brush each hollow with a little of the oil.
  3. Spoon batter into each hollow, top each with a little quail egg and a pinch of scallion, and cook for 2-3 minutes until the edges turn golden and lacy and the underside is set.
  4. Carefully lift each round with a thin spatula, then press two rounds together, egg sides in, so they close like a small stuffed pocket - this pairing is why the snack is called 'husband and wife'.
  5. Return the joined pairs to the pan with a little more oil and fry, turning once, for another 3-4 minutes until both sides are crisp and deep golden.
  6. Drain briefly on paper towels and serve hot and crackly, plain or with a chili dip on the side.
