One serving has 394 kcal and 4 g protein, and at least a fifth of a woman's daily need of manganese (54%), pyridoxine (22%), copper (20%) and selenium (20%). Ready in 35 minutes.

- Preparation: 20 min
- Cooking: 15 min
- Makes: 1 serving (159 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 60 g Rice flour, glutinous
- 45 g Water
- 20 g Sugar, brown
- 15 g Coconut, fresh
- 10 g Sugar
- 8 g Ginger, fresh
- 1 g Salt
Method
- Knead the glutinous rice flour with the water and a pinch of the salt into a smooth, soft dough.
- Pinch off small pieces of dough, flatten each in your palm, place a small cube of the brown sugar in the centre, and seal into a smooth ball.
- Bring a pot of water to a boil and drop in the balls; they are done when they float to the surface, after about 5 minutes.
- Meanwhile, simmer the sliced ginger with the sugar and a splash of water for 8-10 minutes to make a light ginger syrup.
- Lift the cooked balls out with a slotted spoon and roll them in the grated coconut mixed with the remaining pinch of salt.
- Serve warm, dusted in the coconut, with the warm ginger syrup spooned over. This is one portion (about 5-6 balls); multiply the ingredients for more.
