  • Contains: egg, fish, poultry

Ingredients

  • 90 g Rice noodles, dry
  • 100 g Chicken thighs, boneless, skinless, raw
  • 50 g Onions, raw
  • 8 g Garlic, raw
  • 2 g Turmeric
  • 2 g Chili powder
  • 10 g Chickpea flour (besan)
  • 8 g Fish sauce
  • 12 g Vegetable oil
  • 50 g Eggs, whole, raw
  • 5 g Lime juice
  • 8 g Scallions, raw

Method

  1. Finely chop the onion and garlic and fry in the oil over medium heat until soft and golden.
  2. Add the chicken, turmeric and chili powder, and cook for 10-12 minutes, turning occasionally, until cooked through; lift out, shred the meat, and return it to the pan with the fish sauce and a splash of water to keep it saucy.
  3. Toast the chickpea flour in a dry pan for 2-3 minutes until fragrant, for sprinkling over the finished dish.
  4. Boil the rice noodles until tender, drain, and toss with a little of the seasoned oil from the chicken.
  5. Hard-boil the egg, cool, peel and halve. Pile the noodles into a bowl, top with the shredded chicken, toasted chickpea flour, boiled egg, scallion and a squeeze of lime juice.
