Khorkhog (Mongolian Hot Stone Lamb)
One serving has 566 kcal and 34 g protein, and at least a fifth of a woman's daily need of cobalamin (193%), zinc (100%), niacin (85%), vitamin A (72%), selenium (66%) and phosphorus (56%). Ready in 125 minutes.

- Preparation: 15 min
- Cooking: 110 min
- Makes: 1 serving (452 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, High protein
- Contains: meat
Ingredients
- 180 g Lamb shoulder, raw
- 100 g Potatoes, raw
- 60 g Carrots, raw
- 60 g Onions, raw
- 2 g Salt
- 50 g Water
- 0.3 g Black pepper
Method
- Cut the lamb into large chunks and layer in a heavy pot with the potato, carrot and onion.
- Season with the salt and pepper and add the water to the bottom of the pot; traditionally, very hot stones are buried among the meat and vegetables to cook everything from within.
- Cover tightly and cook over low-medium heat, or in an oven at 160 °C (320 °F), for about 1.5-2 hours without lifting the lid, until the lamb is fall-apart tender (well above the safe 74 °C/165 °F).
- Check a piece of potato for doneness, then remove from the heat and rest, covered, for 10 minutes.
- Serve the meat and vegetables together with the rich cooking juices.
