  • Preparation: 20 min
  • Cooking: 15 min
  • Makes: 1 serving (87.3 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 40 g Flour, all-purpose
  • 8 g Butter, unsalted
  • 8 g Sugar
  • 8 g Eggs, whole, raw
  • 0.3 g Baking powder
  • 10 g Milk, whole
  • 10 g Vegetable oil
  • 3 g Raisins

Method

  1. Makes 1 disc (one layer); multiply by 7 or 9 for a full ceremonial stack. Mix the flour, baking powder, egg, milk and half the sugar into a firm, smooth dough.
  2. Roll the dough into a round disc a little larger than your palm and score a decorative pattern, traditionally resembling the sole of a boot, across the top with a knife.
  3. Fry the disc in the oil, or brush with the butter and bake, at 180 °C (350 °F) until deep golden and crisp: 3-4 minutes per side if frying, or 12-15 minutes if baking.
  4. Cool completely.
  5. To build the ceremonial stack, layer the discs, always in an odd number, with a little of the remaining sugar and the raisins between them, largest at the base, and decorate the top with more sugar and raisins.
