  • Contains: alcohol

Ingredients

  • 25 g Rice flour
  • 8 g Cornstarch
  • 220 g Water
  • 1 g Vanilla extract
  • 100 g Coconut milk, canned
  • 30 g Sugar, brown
  • 15 g Adzuki beans, dried
  • 0.3 g Salt

Method

  1. Whisk the rice flour and cornstarch with 100 g of the water until smooth, then stir in a drop of vanilla extract (standing in for pandan) for color and aroma.
  2. Cook over medium heat, stirring constantly, for 5-6 minutes until it thickens into a smooth, glossy paste.
  3. While hot, press the paste through a colander or ricer held over a bowl of iced water, so it drops through as short, worm-like jellies; let them firm up, then drain.
  4. Simmer the adzuki beans in the remaining water until soft, about 40 minutes, and sweeten lightly.
  5. Melt the palm sugar with a splash of water into a syrup, and mix the coconut milk with the salt.
  6. Layer crushed ice, the jelly noodles and cooked beans in a glass, then pour over the coconut milk and palm sugar syrup to serve.
