  • Diets: Dairy-free
  • Contains: gluten, poultry

Ingredients

  • 70 g Flour, all-purpose
  • 20 g Vegetable shortening
  • 25 g Water
  • 60 g Potatoes, russet, raw
  • 40 g Chicken breast, boneless, skinless, raw
  • 20 g Onions, raw
  • 5 g Curry powder
  • 25 g Vegetable oil
  • 0.6 g Salt

Method

  1. Rub the shortening into the flour and a pinch of salt until sandy, then work in the water to a smooth, firm dough; rest for 20 minutes.
  2. Dice the potato and chicken small, and cook with the onion in a little of the oil for 8-10 minutes, until the chicken is cooked through and the potato is tender; stir in the curry powder and remaining salt in the last 2 minutes, then cool.
  3. Roll the dough thin and cut into rounds; spoon filling onto each and fold in half, crimping or pleating the edge to seal.
  4. Heat the remaining oil in a pot to about 170 °C (340 °F) and fry the puffs in batches for 6-8 minutes, until golden and crisp.
  5. Drain on paper and serve warm.
