Ingredients
- 130 g Mackerel, raw
- 45 g Lime juice

- 8 g Chili peppers, red, raw
- 6 g Ginger, fresh
- 0.8 g Salt
Method
- This dish is eaten raw, so use only sushi-grade sea fish that has been frozen first at -20 °C (-4 °F) for at least 7 days to kill parasites; pregnant people should skip raw fish dishes altogether.
- Cut the fish into small, thin, bite-sized pieces, removing any bones.
- Toss the fish with the lime juice and salt and let it cure in the refrigerator for 15-20 minutes, until the flesh turns opaque.
- Thinly slice the shallot and chili and finely grate the ginger.
- Drain off a little of the excess lime juice, then toss the cured fish with the shallot, chili and ginger, and serve immediately, chilled.
