Ingredients

  • 160 g Beef chuck, raw
  • 120 g Coconut milk, canned
  • 25 g Coconut, fresh
  • 10 g Chilies, dried red
  • 30 g Shallots, raw
  • 10 g Garlic, raw
  • 10 g Ginger, fresh
  • 10 g Lemongrass, raw
  • 3 g Turmeric
  • 6 g Tamarind pulp
  • 6 g Sugar, brown
  • 0.7 g Salt
  • 10 g Vegetable oil

Method

  1. Toast the grated coconut in a dry pan over low heat for 6-8 minutes, stirring often, until deep golden brown, then pound or blend to an oily paste (kerisik).
  2. Blend the soaked dried chilies, shallot, garlic, ginger and lemongrass into a smooth paste.
  3. Heat the oil in a pot and fry the paste with the turmeric over medium heat for 5-6 minutes, until fragrant and the oil starts to separate.
  4. Add the beef and stir to coat, then pour in the coconut milk, tamarind and palm sugar.
  5. Cover and simmer very gently, stirring occasionally, for 1-1.5 hours, until the beef is tender and the sauce has reduced and thickened.
  6. Stir in the toasted coconut paste and salt, and cook uncovered for 5-10 more minutes, until thick and almost dry, clinging to the beef.
