Ingredients

  • 70 g Rice, white, long-grain
  • 120 g Chicken thighs, skin-on, raw
  • 15 g Coconut, desiccated
  • 30 g Bean sprouts, raw
  • 30 g Cabbage, green, raw
  • 3 g Mint, fresh

  1. Cook the rice and leave to cool a little; traditionally it is dyed blue with butterfly-pea flowers, which are optional and only for color.
  2. Toast the desiccated coconut in a dry pan until golden and fragrant, then pound to a paste (kerisik).
  3. Rub the chicken with a little salt and pan-fry or grill until cooked through (juices run clear, 74 °C/165 °F), then cool slightly and slice.
  4. Finely shred the cabbage, mint and cilantro and toss with the bean sprouts.
  5. Whisk the fish sauce, lime juice, sliced shallot and chili for the dressing.
  6. Mound the rice on a plate with the shredded herb salad, chicken and kerisik, and spoon the dressing over just before eating.
