  • Preparation: 15 min
  • Cooking: 15 min
  • Makes: 1 serving (154 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 20 g Eggs, whole, raw
  • 60 g Coconut milk, canned
  • 0.3 g Turmeric
  • 25 g Water
  • 3 g Vegetable oil
  • 0.5 g Salt

Method

  1. Whisk the flour, egg, coconut milk, turmeric, water and salt into a thin, lump-free batter, then strain it through a sieve.
  2. Let the batter rest for 15 minutes so the flour fully hydrates and the pancakes cook up tender.
  3. Lightly grease a flat non-stick pan with a little of the oil and set it over medium heat.
  4. Drizzle the batter from a spouted cup (or a piping bag with several small holes) in a fine, overlapping crisscross net over the pan.
  5. Cook for about 1 minute, without flipping, until the lacy pancake is set and no longer wet on top.
  6. Slide it out and fold into a triangle or roll into a log; repeat with the rest of the batter to make about 3 pancakes.
  7. This makes 1 serving of 3 lace pancakes; multiply everything by the number of servings you need. Serve warm alongside a curry.
