  • Preparation: 10 min
  • Cooking: 35 min
  • Makes: 1 serving (642 g)
  • Difficulty: Easy
  • Diets: Gluten-free, Dairy-free
  • Contains: celery, egg, fish, poultry

Ingredients

  • 45 g Rice, white, long-grain
  • 110 g Chicken thighs, skin-on, raw
  • 15 g Ginger, fresh
  • 8 g Garlic, raw
  • 30 g Onions, raw
  • 6 g Fish sauce
  • 150 g Chicken broth
  • 230 g Water
  • 8 g Vegetable oil
  • 5 g Scallions, raw
  • 30 g Eggs, whole, raw
  • 5 g Lime juice

Method

  1. Hard-boil the egg in a small pot of water for 9-10 minutes; cool, peel and slice, and set aside.
  2. Sauté the garlic, onion and most of the ginger in the oil until fragrant and translucent.
  3. Add the chicken and cook, stirring, for 3-4 minutes until it changes colour on the outside.
  4. Stir in the rice, then pour in the chicken broth and water; bring to a boil.
  5. Lower the heat and simmer gently, stirring often so it doesn't catch, for 25-30 minutes until the rice breaks down into a thick, creamy porridge and the chicken is cooked through (74°C/165°F); season with the fish sauce.
  6. Ladle into bowls, top with the sliced egg, remaining ginger and scallion, and serve with the lime juice (standing in for calamansi) squeezed over.
