  • Preparation: 15 min
  • Cooking: 30 min
  • Makes: 1 serving (287 g)
  • Difficulty: Medium
  • Diets: Dairy-free, Low carb
  • Contains: gluten, pork, shellfish

Ingredients

  • 110 g Pork belly, raw
  • 90 g Coconut milk, canned
  • 10 g Oyster sauce
  • 20 g Chili peppers, red, raw
  • 15 g Chili peppers, green, raw
  • 6 g Garlic, raw
  • 30 g Onions, raw
  • 5 g Ginger, fresh
  • 0.5 g Salt

Method

  1. Cut the pork belly into bite-sized strips and finely chop the garlic, onion and ginger.
  2. Sauté the garlic, onion and ginger in a dry pot over medium heat for 2 minutes until soft and fragrant.
  3. Add the pork and cook, stirring often, for 5-6 minutes until it browns a little and renders some fat.
  4. Stir in the shrimp paste stand-in and half the coconut milk, bring to a simmer, cover, and cook over low heat for 20 minutes, stirring occasionally, until the pork is tender.
  5. Add the remaining coconut milk and the sliced red and green chilies, and simmer uncovered for 8-10 minutes so the sauce thickens slightly and the chilies soften.
  6. Taste and add the salt only if needed - the paste is already salty - then check the pork is cooked through before serving hot with rice on the side.
