  • Difficulty: Medium
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 80 g Rice, glutinous
  • 60 g Coconut milk, canned
  • 30 g Sugar, brown
  • 0.3 g Salt

Method

  1. Rinse the glutinous rice, then steam or simmer it in a little water until just tender, about 20 minutes.
  2. Meanwhile combine half the coconut milk with the brown sugar and salt in a wide pan and simmer until it turns into a thick caramel sauce, about 8-10 minutes.
  3. Fold the cooked rice into the coconut caramel and cook over low heat, stirring constantly, for 8-10 minutes until the rice absorbs the sauce and turns sticky and glossy.
  4. Press the mixture firmly and evenly into a small lined dish.
  5. Warm the remaining coconut milk until it thickens slightly, then pour it over the top as a glaze.
  6. Cool for at least 30 minutes before cutting into squares to serve.
