One serving has 820 kcal and 11 g protein, and at least a fifth of a woman's daily need of manganese (80%), copper (46%), selenium (46%), phosphorus (41%), riboflavin (38%) and fiber (31%). Ready in 60 minutes.

- Preparation: 20 min
- Cooking: 40 min
- Makes: 1 serving (233 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, gluten
Ingredients
- 60 g Pie crust, unbaked
- 80 g Coconut, fresh
- 40 g Evaporated milk
- 30 g Sweetened condensed milk
- 8 g Cornstarch
- 10 g Sugar
- 5 g Butter, unsalted
Method
- Roll out the pie crust and line a small pie or tart tin, then blind-bake at 190°C (375°F) for 10 minutes.
- Meanwhile, thinly slice or shred the fresh coconut into strips, standing in for young coconut (buko).
- In a pan, combine the evaporated milk, condensed milk, sugar and cornstarch and whisk over medium heat until thickened into a smooth custard, about 5 minutes.
- Stir in the coconut strips and butter and cook for 2 more minutes, then pour the filling into the part-baked crust.
- Top with a lattice or full layer of the remaining pie crust if you like, or leave it open-faced.
- Bake at 190°C (375°F) for 20-25 minutes until the crust is golden; cool before slicing, as the filling firms up as it cools.
