- Preparation: 75 min
- Cooking: 69 min
- Makes: 1 serving (254 g)
- Difficulty: Hard
- Diets: Dairy-free, High protein, Low carb
- Contains: gluten, pork, soy
Ingredients
- 200 g Pork hock, raw
- 10 g Garlic, raw
- 1 g Bay leaves
- 1 g Black pepper
- 1.5 g Salt
- 20 g Vegetable oil
- 15 g Vinegar, white
- 5 g Soy sauce
Method
- Simmer the pork hock in a large pot of water with the garlic, bay leaf, black pepper and half the salt for 45-60 minutes until tender; drain well and pat completely dry.
- Rub the remaining salt over the skin and let it air-dry, uncovered, in the refrigerator for at least 1 hour (or overnight) so the skin crisps better when fried.
- Heat the oil in a deep pot to about 180°C (350°F).
- Carefully lower in the pork hock and deep-fry, turning occasionally, for 12-15 minutes until the skin is deeply golden, blistered and crackling.
- Drain well and rest for a few minutes before chopping into serving pieces.
- Mix the vinegar and soy sauce with a little chopped garlic for a dipping sauce, and serve alongside.
